Fresh green tea leaves ground into a fine powder, matcha is a beloved flavoring ingredient found in beverages and desserts. It is rich in antioxidants and helps boost liver, heart, and brain functions. Contrary to common belief, matcha is not sweet or creamy but earthy and herbal with a slight tannic aftertaste. Zhang Sengyou was a famous painter in early 5th century China. He once painted four dragons on a temple, but none had eyes. Spectators were confused and upset. Zhang replied: “if I paint the eyes, these dragons will fly away!” Of course, no one believed him. Zhang took up his brush and added eyes to two of the dragons. Suddenly there was a thunderstorm and the two dragons with eyes flew away. The two dragons without eyes have remained on the wall. In Chinese culture, the eyes have thus come to reflect the spirit.
